How about Gates BBQ Rub Recipe, Ollie?
OK! He gave it to me (and all of Martha’s views!)
Here it is…
1 c. sugar
1/2 c. salt
2 T. pepper
2T. red pepper or a little less if you use cayenne (oh, yeah baby!)
1 T ground celery seed
1T ground cumin
Mix it up, rub it in and let ‘er sit for 15 minutes. Grill, bake or broil as you like.
Good on ribs, chicken or whatever is your pleasure, I s’pose.
Personally, I cook in the oven at a low temperature for a longish time (usually because if I had the regular temperature, I’d burn it because I usually go downstairs to stamp and completely forget that I’m cooking and it is much less likely to burn at 275 than 350. Hey, I’ve learned a few things while collecting white hair!)
FYI add your fave BBQ sauce about 15 minutes before it starts to burn and turn off the oven. Then you can go off and stamp for hours and have dinner ready when you get hungry!
BTW, Ollie has locally famous BBQ restaurants in KC. One is about 3 blocks away and some days it is killer to smell his hickory smoke wafting my way! Whoa baby!
